It’s all about authenticity, it’s about being worldly, and it’s about family.

“Don’t fight tradition” is a familiar saying at the Ajmera family table. And this is always referred to in regards to flatbreads, the world’s oldest breads. For the family, the start of the journey in creating Stonefire Authentic Flatbreads was all about being true to the history, heritage and homage of these worldly breads.

The Ajmera’s are very aware that the tradition of making flatbreads has been in existence for over 6,000 years. With participation from almost every corner of the world (from India comes Naan and Roti, from the Mediterranean comes Pita) the intrigue in bringing all the different shapes and textures of flatbreads to North America began.

The Stonefire adventure was rooted with two unbreakable rules. Rule #1 – The flatbreads had to be utterly authentic. Only traditional baking methods and the finest ingredients would be used. Why break with tradition? Rule #2 – The flatbreads would be “preservative free” just as they were years ago.

Baking Methods

But Authenticity is not easy. The Ajmera family undertook a massive study of ancient recipes and toured the world to seek out the best tasting authentic flatbreads. To maintain the traditional baking methods for Naan and Roti, the family had to invent a new technology that perfectly mirrored the intense heat of the ancient Indian tandoor ovens. These ovens, (traditionally, too small for a large scale commercial venture), are made of clay. The dough is placed into a searing hot oven and within seconds the dough bubbles, and the flatbreads are removed from the tandoor. Recreating this ancient, authentic baking technique took the Ajmera’s a few years, several million dollars and plenty of trial and error; but eventually perseverance and passion translated into success. Stonefire was able to meet high demands, producing millions of flatbreads a week.

Ingredients

Ingredients are as equally important as the traditional baking methods. For example, using butter milk and traditional ghee (clarified butter) were an essential component of the Stonefire naan recipe. All dough is made in small batches. The naan is hand stretched. Most importantly, every Stonefire Authentic Flatbread is made with natural ingredients and no preservatives.  When you read the Stonefire ingredient labels you will see that there are no artificial colors or flavors, 0g trans fat and no hydrogenated oils. Plus all Stonefire flatbreads have been created specifically to simply put them in a freezer and use them when you need to.
