Ingredients

Chicken Marinade:

1 pound boneless skinless chicken thighs, cut into bite-sized pieces

3 tablespoons low-sodium soy sauce

1 tablespoon olive oil

1 tablespoon garlic, grated

2 teaspoons ginger, grated

1/2 tablespoon chili powder

1 teaspoon smoked paprika

3/4 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Bang Bang Sauce:

1/2 cup mayonnaise

1/2 cup sweet chili sauce

1 teaspoon garlic, grated

1 tablespoon sriracha

4 pieces of Stonefire® Original naan

Mango Salsa (recipe below)

Easy Mango Salsa:

2 ripe mangoes, peeled, pitted, and diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and finely chopped (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Directions

Chicken Marinade:

  1. Marinate the Chicken: in a bowl, mix the chicken pieces with soy sauce, olive oil, garlic, ginger, and spices (chili powder, smoked paprika, onion powder, salt, black pepper). Let the chicken marinate for at least 30 minutes if you have time.
  2. Prepare the Bang Bang Sauce: in a small bowl, combine mayonnaise, sweet chili sauce, garlic, and sriracha. Mix until smooth. Set aside.
  3. Prepare the Skewers: thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning. Brush lightly with the Bang Bang sauce.
  4. Grill the Chicken: preheat your grill to medium-high heat.
    • Place the chicken skewers on the grill and cook for about 10-12 minutes,
    • turning occasionally, and brushing with the Bang Bang sauce, until the
    • chicken is fully cooked and slightly charred.
  5. Grill the Naan: place the naan on the grill for 1-2 minutes on each side until warmed and slightly charred.
  6. Serve: drizzle the remaining Bang Bang sauce over the grilled chicken skewers. Serve the skewers alongside the grilled naan or as a wrap with the mango salsa on top. Enjoy!

Easy Mango Salsa:

  1. Mix All Ingredients: Combine mangoes, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt in a bowl. Stir well and serve.
