Greek Rice Bowl with Naan

Ingredients
- 1 pack of Stonefire Original Naan
- Long-grain rice, cooked
- Chicken breast, cooked, sliced or diced
- Red onion, diced
- Cucumber, diced
- Cherry tomatoes, halved
- Roasted chickpeas (optional)
- Feta cheese crumbled
- Tzatziki sauce
- Garnish with mint
- For the Greek dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
Directions
- Start by preparing the cooked rice and chicken breast. Cook them according to your preferred method (baking, grilling, etc.) or use leftovers.
- To serve, place the rice in a bowl and top with red onion, diced cucumber, halved cherry tomatoes, and roasted chickpeas. Add the cooked chicken breast. Sprinkle crumbled feta and fresh mint and a spoonful of tzatziki sauce.
- Pour the Greek dressing over the rice mixture. Serve with a size of warm Stonefire naan. Yummy!
