1 pound large shrimp, peeled and deveined1/4 cup olive oil2 tablespoons soy sauce2 tablespoons melted butter3 cloves garlic, minced1 teaspoon grated fresh gingerJuice of 1 lemon1/2 teaspoon salt1/4 teaspoon black pepper1/2 teaspoon paprikaFor the Skewers:1 cup pineapple chunks1 red onion, cut into chunks1 red bell pepper, cut into chunks1 green bell pepper, cut into chunks1 orange bell pepper, cut into chunksWooden skewers, soaked in water for 30 minutesFor the Chipotle Cream:1/2 cup sour cream1-2 chipotle peppers in adobo sauce (adjust for spice preference), finely chopped1 tablespoon lime juiceSalt and pepper to tasteFor Serving:Stonefire® Original Naan.
- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons melted butter
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
For the Skewers:
- 1 cup pineapple chunks
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 orange bell pepper, cut into chunks
- Wooden skewers, soaked in water for 30 minutes
For the Chipotle Cream:
- 1/2 cup sour cream
- 1-2 chipotle peppers in adobo sauce (adjust for spice preference), finely chopped
- 1 tablespoon lime juice
- Salt and pepper to taste
For Serving:

In a bowl, combine all the marinade ingredients - olive oil, soy sauce, melted butter, minced garlic, grated ginger, lemon juice, salt, pepper, and paprika. Mix well.Place the peeled and deveined shrimp in a resealable plastic bag or shallow dish. Pour the marinade over the shrimp, making sure they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, allowing the flavors to meld.While the shrimp is marinating, prepare the chipotle cream. In a small bowl, mix together the sour cream, finely chopped chipotle peppers, lime juice, salt, and pepper. Adjust the spice level by adding more chipotle peppers if desired. Refrigerate until ready to serve.Preheat your grill to medium-high heat.Assemble the skewers by alternating marinated shrimp, pineapple chunks, red onion, and bell pepper chunks onto the soaked wooden skewers.Oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque with grill marks.While grilling the skewers, you can also place the Stonefire® Original Naan on the grill for a minute or two to warm it up and get a nice char.Once the skewers are done, remove them from the grill.Serve the grilled shrimp skewers with a side of warm Stonefire® Original Naan and a drizzle of the chipotle cream sauce for dipping.
