A vibrant, nutrient-packed bowl layered with fluffy quinoa, creamy hummus, crisp vegetables, briny olives, and crunchy roasted chickpeas—served with warm Stonefire® naan dippers® for the perfect scoop. Fresh, satisfying, and full of Mediterranean flavor.
Ingredients
- Stonefire® Naan Dippers®
- 1 cup cooked quinoa
- ½ cup canned chickpeas, drained and rinsed
- 1 tsp olive oil
- ¼ tsp paprika or cumin
- Salt & pepper, to taste
- ½ cup hummus
- ½ cup chopped kale (lightly massaged)
- ¼ cup pickled red onions
- ¼ cup cherry tomatoes, halved
- ¼ cup sliced cucumber
- ¼ cup mixed olives
- 1 tbsp crumbled feta (optional)
Directions
1. Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, paprika, salt, and pepper. Roast for 12–15 minutes until crispy.
2. Cook quinoa according to package instructions if not already prepared; set aside.
3. Assemble bowls by dividing quinoa between two bowls.
4. Add hummus to the center, then arrange kale, roasted chickpeas, tomatoes, cucumber, olives, and pickled onions around it.
5. Sprinkle with feta if using.
6. Warm Stonefire naan dippers for 1-2 minutes if desired.
7. Serve immediately with naan dippers for scooping.
